Have you ever had a food item that made your mouth water…it was so good. Do you have a go to recipe for dinner parties and you always get RAVE reviews? THIS SALAD IS ALWAYS A FAVE! (Ethne loves this recipe too).
I first tasted Bok Choy Salad (AKA Crunchy Green Salad) at my former co-worker and friend Carol’s house! You see—it was DELICIOUS AND I NEEDED THE RECIPE! Luckily Carol shared and now I am sharing with all of you.
First up, Steve and I love Bok Choy. It’s green, it’s crunchy, and it makes a fabulous side salad too. I compare it to a combination of celery and lettuce all in one. You will find it most grocery stores and even my local Wal-Mart sells it (typically you will find it near Cilantro).
BOK CHOY (lettuce and celery all in one) |
½ cup butter
2 Tablespoons sugar
¼ cup sesame seeds
1 (3 or 4 oz.) slivered almonds
2 (3 oz.) ramen noodles broken (uncooked—do not use seasoning)
2 lbs. Bok Choy, chopped
4 green onions sliced (greens, too)
Ingredients needed for dressing:
¾ cup vegetable oil
½ cup sugar
¼ cup red wine vinegar
2 Tablespoons soy sauce
Instructions:
Chop up your Bok Choy. I typically break the Bok Choy pieces apart (similar to celery) and chop up.

Chop up your green onions and mix.

In a large skillet, melt butter over medium heat. Add sugar, sesame seeds, broken ramen noodles, and almonds. Brown 5-10 minutes. Cool. (This can be made the day before).

Mix all dressing ingredients.
To serve, put topping on top of greens, than add dressing.
It tastes great--plus it looks FANCY! |
(I typically keep the dressing in a separate container and the topping in a separate container until I am ready to serve. Your salad will eventually get soggy if you mix all ingredients well in advance).
ENJOY! You will love it, your family will love it, and your dinner guests will love it! This also works great for a potluck! WOMS-YOU WILL LOVE IT!
