We have done Hunk of Meat Mondays in the past, but why not do a Meatless Monday post for you. I am happy to report that I didn't gain any weight in France and have maintained my 20 pound weightloss.
I want to keep this going.....
Here's a great Martha Stewart recipe that turned out DELICIOUS plus it was SUPER EASY!
Nothing is better than a crock-pot meal (especially with stuffed green peppers)!
Ingredients Needed:
4 large bell peppers (any color)
1 can cannellini beans (rinsed and drained)
1 cup crumbled feta
1/2 cup couscous
4 scallions, white and green parts, chopped (and seperated)
1 garlic clove minced
1 tsp dried oregano
coarse salt and freshly ground pepper
lemon wedges, for serving
Directions:
Step 1: Slice a very thin layer from the bottom of the bell peppers so that they sit flat. Slice off tops just below the stems. Discard stems; chop tops, and place in a medium bowl. Remove ribs and seeds from the peppers.
Step 2: Add beans, feta, couscous, scallion whites, garlic, and oregano in a bowl. Season with salt and pepper and toss to combine.
Stuff peppers with with bean mixture; place upright in a slow cooker.
Cover, cook on high, 4 hours.
Step 3: Sprinkle peppers with scallion greens; serve with lemon wedges.
This recipe turned out delicious! So delicious in fact (that I forgot to take the "after" photos). And, this recipe is SUPER HEALTHY!

That looks good!! I've just returned to a mostly vegetarian/vegan diet, and made chana saag Saturday and a southwestern mac & cheese (healthified with almond milk, whole grain pasta, and low fat cheese) on Sunday. I'm going to have to give this a try!
