PIONEER WOMAN PRIME RIB!

I was under the weather this Easter weekend and requested that Steve make me prime rib for Easter Sunday.  If I could have one last meal on Earth, prime rib would be included.  DECISION DONE!  

I found a recipe from the Pioneer Woman and was impressed by the minimal cooking time (literally under an hour).

Prior to baking the meat, you actually sear the roast in olive oil on the stove.

Then you will want to create your spice rub.  Remember, to follow her recipe. 
Her rub included Thyme (our Thyme came right out of the freezer).


This is Steve massaging the meat.  Honestly, this reminded me of the Ham Massage scene in Fargo, the TV Show. 



Then you bake your meat.  First at 500 degrees and then you turn the temperature down.  Of course this is all dependent on the size of your roast.
You definitely want to use a meat thermometer.  When the internal temperature hits 125 degrees your meet is done.  Let the meat sit for several minutes before cutting.

We also made au jus and followed the Pioneer Woman recipe here.  The recipe called for all kinds of things that you eventually strain off leaving the au jus behind.










There it is, my perfect prime rib dinner!  DELICIOUS!

LEGO TRAY (and a little Easter Recap)

I am under the weather and honestly not feeling well.  Our plans for Easter fell through, because I was not up for traveling.  I am feeling a little better, and spent most of the weekend in bed.  

Prior to the weekend, I had started on an Easter project for Mur-Man and my nephews.  I wanted to create an under-the-couch Lego tray.  I think they turned out great.

The project started at a book sale at my little city, ND college.  They had frames for sale for $1.00!  I snagged three!


I removed the prints and purchased foam-core at Wal-Mart for $1.50/sheet. Three frames required three sheets of foam-core.  I attached the frames to the foam-core using wood glue.


I purchased the Lego building plates at yoyo.com.  Overall, they were the most affordable option with the smaller blue/green plates selling for $5.00/plate.


I did purchase vinyl letters for the trays.  I purchased them from a local printing shop for $3.00/tray.




Using wood glue and scissors, I was able to cut the Lego plate to fit and attach it to the foam-core.


I did test-out the plates to ensure they were spaced properly.


Mur-man received his tray Easter morning.  By the way, this is Max our new Goldendoodle.  He has a haircut scheduled Tuesday!  We are in LOVE!
Mur-Man is also using his Lego Drawer!  It works slick and can roll in and out of his room (easy to put away)!
Mur-Man also got Walkie-Talkies for Easter.  We have tried them out.  Mur-Man's call sign is Cosmo, Steve is Bubba, and I am Bahama Mamma (love it)!
 
Steve freaked me out today by sporting a stache!  Totally creapy!  It lasted roughly two hours and I am happy to report--it is gone!  THANK GOD!
 
For Easter Dinner, Steve made me Pioneer Woman Prime Rib.  It was DELICIOUS!

WTF (WAY TOO FUN): RESURRECTION EGGS

Mur-man came home with a set of Resurrection Eggs from school.  He attends a private catholic preschool.  It was such a nice surprise in his backpack.  Honestly, I have never seen these, but am excited to go on an Easter Egg Hunt Easter Sunday and read the included Easter story.

EASTER GARLAND

I found this inspiration online and I have lost the online link.  I love the inspiration, and I wish I could give the crafter credit.  Unfortunately, that is a no go; however, I knew I could recreate this project for little or nothing.


First up, I created a pattern for my bunny.


And traced the pattern onto the back of scrapbook paper (already in my craft stash).


I ended up with roughly 20 paper bunnies.  


Using Elmer's School Glue and my Target dollar section poms, I attached the poms to the bunnies. 


Next up, I attached the bunnies to the ribbon (in my craft stash) using scotch tape.


SUPER CUTE!  RIGHT?!?  Literally, crafts do not get any easier than this!

EASTER POM WREATH!

Mur-Man and I are really enjoying our Mondays and Fridays together since I switched positions at my little city, ND college.  I am really enjoying the added crafting time.   With Easter coming up soon, it was time to start decorating (and I wanted to do this on a minimal budget--like nothing).

I pulled out pom poms I found in the dollar section of Target.  Seriously, I have said it a million times, but I LOVE the Target $ section, It is amazing!   This project took me just under 4 packs (or $4.00).


I squirted the Elmer's Glue onto the wreath and Mur-man placed the poms.  Once he had enough and his attention span was done, I went back and finished filling in the wreath.
 


I had thought about sewing a mini pendant banner, but then I remembered I had purchased a banner in the clearance section at Target during a previous visit.  Total cost was ONLY .94 cents.



Using scotch tape, I attached the banner to the back of the wreath. 


I love it and this project took under one hour.  Total cost (remember, I already had the glue and wreath in my craft stash) came in at under $5.00.  I LOVE IT!

Bacon & Cheddar Deviled Eggs!

As promised in Lori’s egg and artichoke post (here) earlier in the week, I made bacon-cheddar deviled eggs for Easter.  And they were DALISH!!


Lori and I have a few life mottos: bacon is a condiment; butter is a necessity; and deviled eggs are an essential part of our last meal on Earth (I call this my “Death Row Meal” when I’m not as worried about offending anyone.  No offense anyone.)

Shaun doesn’t normally eat deviled eggs, but he sent me this recipe shortly before Easter, and said he’d eat these.  OF COURSE, I forgot to print or even write down the recipe, I just memorized it after a read-through.  Sorry about that.  I’m pretty sure it came from the Minneapolis Star Tribune online.  My version might not be exactly the same since I usually mess with recipes anyway.

Here’s what you need:

These were not the easiest to peel.  Fortunately, Thrifty Nana (my mom) had also dyed others.

- 6-8 hard-boiled eggs
- 1 cup mayonnaise (I use the kind with olive oil)
- 2-4 strips bacon (I just used what was leftover from breakfast), chopped up into little bits
- 1-2 cups of shredded sharp white cheddar cheese (I’m almost positive the recipe called for less, but Shaun suggested I throw in all that I shredded and I’m all for not wasting the fruits of my labor.)  I shredded it with the fine blade.
- 2 T bacon grease from when you fried the bacon (don’t scoff, it’s delicious – it helps hold the eggs together too)
Tabasco hot sauce

Here’s what you do:

Carefully cut the eggs in half.  Pull out the yolks and put in a medium-sized bowl and mash finely.  Put the white parts on a plate (I used my deviled egg plate and there were a few extra on a small plate) and set aside.

Add your cup of mayo to the mashed up egg yolks.  Stir around well, then add the bacon grease.  Stir around some more.

Now add in the bacon bits and shredded cheese.  Stir around until well blended.

We used Oscar Mayer bacon, though others would be fine - we use coupons and shop sales these days since bacon prices have gone through the roof.  Insanity.  Of course, by the time the bacon is used in this recipe, it is COOKED.
White cheddar tastes exactly like yellow cheddar, but white won't show when mixed up with the egg yolks and mayo, so it's perfect for this recipe.

Fill the whites with yolk mixture – you can be generous because you probably have a lot of it.  I even had a little leftover. 

Refrigerate until you are ready to serve.  AT THE TIME YOU SERVE THE EGGS, shake 2 or 3 drops of Tabasco sauce on the deviled eggs.  So tasty!!  I might recall that each egg in the recipe had a slice of olive on the top of the yolk for a tasty garnish, but I did not find this necessary, nor was I perfectly certain.  Go ahead.  [If Shaun were on death row, I would for sure add an olive so he could get both of his favorite condiments into his last meal – bacon and olives.  What a good wife I am.]

EASTER "sort of" BASKET

I had planned to post on Friday, but ended up getting sick!  Sinus Infection extended (#2 dose of Antibiotics).  This infection included a low temp and I felt MISERABLE!

Before getting sick, I did whip-up some super cute Easter Egg Cartons (for Mur-Man and the nieces and nephews).  However, our Easter plans changed...and they will have to get their Easter baskets later!

Empty out egg cartons (I even used 1/2 egg cartons)
Find filler:  I found these craft bird nests at the thrift store
for 10 cents each!  TOTAL DEAL!
Stuff your egg carton.  I used eggs, chocolate, peeps, candy, etc!
We added Pez dispensers to the top!
THERE YOU HAVE IT!
Mur-Man and Steve also found time to dye eggs!  THEY HAD FUN!
