Scott & Erin got hitched!

Hey everyone!  Keeping warm?  It's predicted to be about -50 degrees F here.  The governor called off school for the kids.  Super.

Fortunately, it hadn't gotten QUITE that cold for Shaun's brother's wedding on Saturday.  Cold, but not sub-zero.

It was a wonderful affair.  Shaun's brother, Scott, married Erin - we are thrilled to have her and her daughter, Ava, join our family!  Ava happens to be the exact same age as the girls, so the three of them are pleased as punch.

Scott & Erin are very stylish, so I knew it would be a fabulous event, and I wasn't disappointed.  Erin wore her mother's dress for the ceremony (amazing!) and then a smashing party dress for later.  Ava wore a really pretty ivory dress that made me think of a Grecian princess; I also thought the emerald green bridesmaid dresses had a Grecian feel to them.

Heather (Scott & Shaun's sister) was also a Grecian princess; she was thrilled in the green color choice - her favorite. :-)

Shaun was best man, so looked very dapper in his navy blue suit.  I put the girls in navy party dresses and I wore a forest green dress - so we would all coordinate for family pictures.

Having heard of the new blow-dry bar trend, I went to Blast Drybar in Minneapolis and had my hair blown out the morning of the wedding.  I'm glad I did.  I also wore fake eyelashes.  If you do nothing else, wear fake eyelashes to a wedding, my friends.

A SURPRISE ENGAGEMENT!!!

We have wonderful family news!
Shaun’s brother, Scott, proposed to his girlfriend, Erin, last Sunday!
 
I am told the proposal was magical and completely unexpected for Erin, which is so exciting!
{My proposal from Shaun was also magical because he got down on one knee in the parking lot of a strip club – because we’re classy.  As I explained to Erin, *in fairness to Shaun*, the strip club happened to share an alley parking lot with the super nice restaurant wherein Shaun actually proposed in the warehouse district of big city, MN; but I kinda wanted him to get down on one knee, so as we were leaving the restaurant, he did so in the parking lot.  That’s the good stuff, as I like to say.}
So this means I get to add a new sister-in-law to the mix and the girls add a cousin/sister (those blur together in our family) with Erin’s daughter, A.
I’m sure I’ll have a thing or two to say about the nuptials, so stay tuned!  At a minimum I told Erin I can now pay attention to the ka-zillion wedding pins on Pinterest I've ignored before.  [Insert groan from Shaun here.]
Though a common misconception, Shaun and Scott are not twins.  They are three years apart people.  (Grass level is contributing to height difference here; Shaun is not a giant.  I had to sneak attack the pic so I couldn't be picky.)

Amazing Wedding Shower Cupcakes

Friends, I have total amazingness to share with you today!  My pal E is a complete MASTER when it comes to baking.  When she makes her daughter’s birthday cakes, I swear my eyes are deceiving me and I’m really watching ‘Ace of Cakes’ on TLC.

So naturally when E threw a bridal shower recently, she put her genius into action again.  She purchased cool black and white cupcake papers at JoAnn – prices are reasonable there, and you can use your 40% off coupons!!  She purchased the other bridal items at Party City and I think you’ll agree with me, those diamond rings are awesomesauce (my new fave term a la Lor's and my fave blog younghouselove).

The nice thing about making cupcakes is, well, they’re easy.  You don’t have to be a genius to make them, if you want to try to follow in E’s footsteps.  If you don’t have a gourmet recipe, or you are a beginner at baking and frosting, you can use store-bought cake mix and frosting.  In this case, E used Wilton’s White Chocolate Buttercream recipe here and she said it was DELICIOUS.

Of course E piped the frosting on and made it look really fancy – I’d expect nothing less – and she used heart-shaped cookie cutters to make those hearts out of black fondant.  You can be extremely creative in decorating – and now that you’ve seen E’s example, you can follow along.  She was very enthused to be featured as a guest on the blog, and I know she’d love to hear back if any of you tried some of her techniques!

HO-DO!

We spent the weekend in big city, ND (AKA Fargo, ND).  And we were there to celebrate a wedding reception at the HODO (Hotel Donaldson in Fargo).

Anatomy of a Wedding Cake

One of the crowning achievements of a Wolcott wedding is the wedding cake.  My wedding cake is, to this day, the most beautiful cake I’ve ever seen.

All of Aunt Pam’s cakes are beautiful, though.  She’s made them for every niece and nephew.  Imagine the work that goes into that – four full days of baking, assembling and frosting – and one hair-raising drive from Grandma’s house (where the cakes were made and frosted) to the reception hall to assemble and decorate with fresh flowers.

So here’s the labor of love in progress:

(1) I wasn’t there for the baking of the cakes, which occurred on Wednesday and Thursday.  Aunt Pam’s famous hummingbird cake was one of the layers – we all fight over it and I read that a hummingbird cake was the cake that Prince William requested for wedding cake when he married Kate last year.  I’d say it’s a cross between banana bread, carrot cake and pineapple upside-down cake.

There are also layers of chocolate (which is normally my favorite but can’t compare to hummingbird), yellow and the bride K requested strawberry cake too.  Aunt Pam is careful to bake enough cakes so the top cake is saved.  She personally wraps it for freezing to eat on their one-year anniversary.

 (2) The next step is frosting the cakes.  Aunt Pam uses Bettercreme frosting, which comes in milk-carton type cartons and you whip it in in the mixer until soft peaks form.  It’s light and fluffy.  Bettercreme is perfect for any type of cake; you can color it; and it can be mixed with softened, whipped cream cheese, which Aunt Pam does for the hummingbird layers.

(3) Aunt Pam evens out the cake layers till both top and bottom sides of the cakes are flat.  She then places a nice layer of frosting between the two cake layers and levels things out with wedges (from the evening-out process) of the cake and extra frosting.

(4) Frosting is very time intensive.  In fact, Aunt Pam started frosting the cakes on Friday at noon and didn’t finish until midnight.  I suggested she use the wavy frosting technique like she used for my cake; that goes a little faster.  She probably uses the smooth frosting technique more, but I personally prefer how decadent the wavy frosting looks.

(5) Somehow in the midst of all of this, Aunt Pam dashes out to buy fresh flowers because she believes that is the most beautiful way to finish cake decorating.  And she’s right, the color is amazing.  K and Z’s wedding décor was rustic, so there were a lot of reds and turquoise colors to work with.  And rest assured: Aunt Pam washed all of the flowers, including the violets she picked from Grandma’s back yard.

(6) Nicole and I drove the cakes from Grandma’s house to the hall.  Aunt Pam followed us and as we pulled out of the driveway you could see the stress on her face.  She would’ve shot poison darts with her eyes if we hit a bump in the road wrong!

(7) Wedding cakes are almost always in a prominent location at the reception; preferably the cake gets its own table so Aunt Pam can cut and serve the cake (which she insists on so each guest can pick the type of cake they want – nothing else will do!) once the bride and groom cut into it.  Aunt Pam sticks open cake tubes into the cake in a square pattern that matches the short legs of the stand on which the next smaller layer is placed.  The tubes should stick out of the cake about an inch.

(8) Any accidental (or purposeful if the little kids are around) smudges into the frosting are patched with extra frosting that is brought along and then Aunt Pam puts flowers in a pattern that she creates as she goes.  It’s edible artwork, my Friends.

The next day we always eat whatever scraps are leftover, and I was shocked when I saw there were hardly any at all.  There’s no better compliment to a cake artist.
