LASAGNA MUFFINS!

First I need to apologize to you and to Ethne for being a HORRIBLE wom-mom co-author.  I work at a college in my little city, ND home and am extremely busy with new students arriving.

I decided to whip-up a quick dinner that could easily freeze and be ready for future lunches and dinners.  This idea and recipe came courtesy of my friend and co-worker Danika.

Brown hamburger with onion, and mix in spaghetti sauce.


I also recommend seasoning the beef mixture with salt and pepper.  I decided to grease the muffin tin and then place the wonton wrappers (I used the egg roll size) in the muffin tin folding down the edges.  Fill wonton wrappers with ricotta cheese and then add the meat mixture.


Cover with Mozzarella cheese.  
 

Bake at 350 degrees for 10 minutes. 
 


Don't over-bake.  THIS IS WHAT HAPPENS!
