Grilled Flatbread Pizzas!

The other night we replicated the grilled, flatbread BBQ chicken pizzas we made at cooking night on girls trip.  Yum.  We deviated a little bit (I usually do) to go with what I had on hand, but it was a great way to use leftovers.  Here’s the easy-peasy scoop.  You gotta try it – thanks for the idea Steph! 

PS, she said that they tried pepperoni and it wasn’t that good, but the kids liked cheese-only.

PPS, on GT, we didn’t use mozzarella, just parmesan, we added thinly sliced red onion (awesome) and we used rotisserie chicken instead of leftover like I used here, but either way, it worked great.

PPPS, I totally want to try a margherita pizza this way – tomato, basil and mozzarella – once my basil plants are big enough (I grew them from seed this year).

We found these in our dairy section.  Steph found hers - same brand - in the freezer section in her state (no idea why)
All ready with toppings - a light layer of BBQ sauce (being sweet it can be overpowering if you use it too heavily), chicken and mozzarella cheese.  We put them on a cookie sheet so we could slide them onto the grill.
On the grill.  I had to take a quick shot because Shaun doesn't like his cooking to be interrupted...these are grilled on low heat until the cheese is melted and the crusts start to crisp up and turn brown in places.

It's browned in spots but not everywhere, cheese is all melted.  You can see how it's crispy and standing up from the plate.
