EASY ARTICHOKE DIP!

For the birthday party I wanted a super quick and easy dip, once I knew in advance Shaun likes, which means everyone will like it!  Whit is a bit of a condiment snob (ie, she doesn’t like condiments, though she concurs with Lori that bacon is a condiment) so it couldn’t have mayonnaise in it.

Grad day needs some yummy food!

This did recipes comes from Mom Connie, my stepmom.  All you need:

1 large block of cream cheese (8 oz. I believe)
1 cup of parmesan cheese (I got the shredded kind, but the shaker kind will work too)
2 T. lemon juice
1 can/jar of artichoke hearts (they come in oil or water and either would work)

Chop the artichoke hearts into small bits (not too fine) in a food processor or with your knife.  Food processor is definitely easier – I used my little one.

Bring the cream cheese to room temp so it’s easy to mix with the other ingredients.

What is 'natural strength' lemon juice?
Can't go wrong with cheese.
Stir - I forgot to take an after shot!!!

Stir it all together till well mixed and done!  Serve cold or room temp with Triscuit crackers.  We’re big on the Rosemary & Olive Oil and Roasted Garlic flavor ones at the moment.  Super Da-Lish! 

[NOTE: you always want to be careful that your food won’t spoil, but because this doesn’t have mayonnaise or other raw egg ingredients in it, it will be fine if it sits on the table for a few hours while your guests munch it down.  It probably won’t take that long.]
