MOUTH-WATERING MONDAY: Porcupine Meatballs

My folks were in town for the weekend and Steve and I were thrilled!  My parents=home projects (remember handy G-Pa), craft projects (remember crafty G-Ma), time with the Mur-Man, and great food!  All the goals were met and we had a FANTASTIC time!

And so it is HUNK OF MEAT MONDAY and I knew the perfect meal to make.  One of my mom’s best!  Better yet—it is simple and FIVE INGREDIENTS OR LESS! 
Porcupine Meatballs are a staple in my house—keep in mind I grew up in a meat/potato household and loved it.
Before we get started this is a crock-pot meal.  Ethne and I love crock-pot meals and I recently discovered crock pot liners. 
Let's put these to the TEST!

I don’t know about you, but nothing is WORSE than soaking a crock pot for days—trying to get it clean.  And, so I wanted to put the meatballs to the crock pot liner test. 

The liners in place...now let's put the meatballs to the TEST!
PORCUPINE MEATBALLS
Ingredients:
2 pounds of hamburger
1 cup of rice
Onion
2 cans cream of mushroom soup
1 cup of water

Meatball supplies!  THIS IS IT!
Instructions:
Combine the hamburger, rice, and onion (chopped up).  
Mix up and make balls!

Form into meatballs. 

Hands work best!

A visual for your meatball size!
Mix the soup and water in a separate bowl.  Pour mixture over the meatballs. Cook in the crock pot on high for three hours.

Mixed up and ready to cook.

I served this meal with mashed pototaes, asparagas, toasted French bread, and sliced strawberries and kiwi.  DE-LICIOUS!

Mur-Man loved it too!

And guess—what the crock pot liners worked great.  No mess left behind. 


Check it out--the mess goes straight to the trash.

Even Crafty G-Ma hadn’t used them, but is now sold on their time saving advantage.
WOMS—COOK THESE MEATBALLS AND USE CROCK POT LINERS!  Both Ethne and I swear by them!
